That's most likely because the last few times she let her temper go it didn't go so well for her. She's learning to wait for the right opportunity. Of course imminent threat of death may change that.

In Liu Xi's case Yuki's primary plan is to make her feel guilty. Failing that, Liu Xi is only human. Also note that Yuki has the same primary plan for Anna.

It sure may seem to everyone concerned like he's aiding the Void Scholar. He may be in for trouble on that basis.
